Sausage Egg & Cheese Muffins


Had to make a few alterations to the original recipe to meet my dietary needs but they taste so delicious!

Cook, drain & cool -
10 oz. mild pork sausage

Add & mix together by hand until well blended -
4 oz. shredded reduced fat cheddar cheese
1 1/2 cups of Mexican Style egg substitute
1/2 cup skim milk
3/4 cup baking mix (Bisquick, etc.)

Preheat oven to 350. Spray muffin pan with a non-stick cooking spray. Divide mixture evenly into muffin pan. Bake for 20 - 25 minutes or until set. Let them cool slightly, then carefully remove from pan.

Approx. 125 calories each! Yummy for breakfast or mid-day snack. ENJOY!
